Creamed Salmon in Penne
Ingredients:
•200 grams of Penne will be enough for this dish, but if you already have spaghetti sitting in your cupboard, you can use it.
• 1 600 ml box of fresh white sauce is perfect, there are many available white sauces in the grocery, but using one that’s homemade is always better.
•200 grams or 7 ounces of spinach will add color to the dish, frozen, packed or bagged, any variety will be good.
•50 grams of freshly sliced mushrooms is ideal, if you don’t have access to fresh mushrooms, canned ones will do.
•2 x 175g or 6oz of canned salmon is enough protein.
•50g/2oz grated cheddar cheese
•Pepper and salt
Cook the pasta for 10 minutes, constantly checking it after the 8th minute to make sure it’s al dente. Wash the spinach in cold running water, make sure you keep the spinach leaves as in tact as possible.
Put your white sauce into a saucepan and heat until it is slowly boiling, don’t boil it for long as this will ruin your sauce. Add the extra juices from the canned salmon.
Add the spinach and mushrooms and simmer for 3 to 4 minutes, stirring occasionally.
Add the grated cheese & season with salt, pepper.
Add the cooked pasta in batches if necessary.
Allow the sauce to coat the noodles then serve in bowls.
