Oven Baked Salmon In Dijon Crust

Ingredients:
• 1/4 cup butter, melted
• 3 spoon fulls of Dijon Mustard
• 1 1/2 tablespoons honey
• 1/4 cup dry bread crumbs
• 1/4 cup of ground pecans
• 4 spoons of   Italian flat leaf parsley
• 4 salmon fillets  approximately 4 ounces each
• a good amount of salt and pepper
• and 1 lemon for garnishing

First thing to do is to pre-heat your oven to 400 degrees F or 200 degrees C. This is crucial if you want the salmon fillets to be cooked perfectly without having to put them back in the oven.

Mix together the melted butter, Dijon mustard and honey in a bowl, it might take time before the butter is integrated with the mix, using a whisk will make things much easier. In a separate bowl mix your dry ingredients together, which are the fresh breadcrumbs, chopped pecans and freshly chopped parsley. The pecans will give the dish a nice crunch and nutty flavour, but if you don’t have it, it’s ok the dish will still taste good without it. Easy salmon recipes are not supposed to stress you out.

Brush each salmon fillet lightly with honey mustard mixture, just enough that the mixture slowly falls off each side of the fillet. Top the fillets with the bread crumb mixture.  The breadcrumbs will give the salmon an extra crunch and keep the fillets juicy.
